When Ottawa food lovers argue about the city’s best restaurant, Supply and Demand is either the answer or the standard the answer is measured against. Steve and Jennifer Wall’s seafood-and-pasta room in Wellington West has spent over a decade proving that a neighbourhood restaurant can cook at a national level — and the nightly full house has long since stopped being news.

The Story

The Walls opened their “Foods & Raw Bar” in early 2013, and validation came almost immediately: enRoute magazine ranked it among Canada’s best new restaurants of the year, and it has appeared on the Canada’s 100 Best list multiple times since. Through it all the formula stayed humble — supplier relationships, seasonality, and a menu short enough that every dish carries weight.

What to Order

The raw bar is the overture: oysters, crudo and whatever the coast sent. The squid ink rigatoni is the signature — dark, briny and copied all over town, never matched — while the butternut squash ravioli, shrimp toast with whipped roe and house-made sausage rotate through the seasonal card. Pasta is extruded and hand-made daily; the famous kale salad balances the indulgence.
